Pumpkin Time!

It’s that time of year where pumpkin pie is everywhere for Thanksgiving.  Truth be told, I have never cared for pumpkin pie, or any pie for that matter.  I am the type of girl who says, “why have that, when I can have chocolate!”

However, last week I tried a slice of raw pumpkin pie and I was in love!  So I have decided to try and make my own raw pumpkin pie for thanksgiving dinner because it is not only delicious, but it is “Cortney friendly.” 

My first step in creating this master piece is to create raw pumpkin puree.  Here is how I did it..

First you’re going to need pie pumpkins.  Cut the tops off just like you would when you get your pumpkins ready for Halloween.

Next cut the pumpkins in half and clean out all of the seeds.  Once you’ve cleaned your pumpkins you can begin to peel the skin off.

Slice up pumpkin and then cut into chunks.  Then place your pumpkin in your food processor and puree! 



* I would like to note that I tried to use my little food processor however it just was not getting the job done so I threw the pumpkin in my juicer, which worked wonderfully!

Cortney "Friendly" Chocolate Chip Cookies

Yesterday was a great day for some relaxing and having some fresh baked cookies!  With my restricted diet I decided to take me first attempt at baking some gluten-free, eggless, and dairy-free cookies.  Oh, come on, they don’t sound that bad…do they?  I picked up a bag of Bob’s Red Mill gluten free all-purpose baking flour and used the cookie recipe on the back of the bag as my recipe guideline.   The recipe is as  follows:  ·        1-1/2 cups  Gluten Free Oat Flour ·        1 cup  GF All Purpose Baking Flour ·        1 cup Organic Sugar ·        1/4 cup  Flaxseed Meal ·        1/4 cup  Arrowroot Starch ·        1-1/2 tsp  Xanthan Gum ·        1 tsp  Baking Soda ·     ...
