Pumpkin Time!

It’s that time of year where pumpkin pie is everywhere for Thanksgiving.   Truth be told, I have never cared for pumpkin pie, or any pie for that matter.   I am the type of girl who says, “why have that, when I can have chocolate!” However, last week I tried a slice of raw pumpkin pie and I was in love!   So I have decided to try and make my own raw pumpkin pie for thanksgiving dinner because it is not only delicious, but it is “Cortney friendly.”   My first step in creating this master piece is to create raw pumpkin puree.   Here is how I did it.. First you’re going to need pie pumpkins.   Cut the tops off just like you would when you get your pumpkins ready for Halloween. Next cut the pumpkins in half and clean out all of the seeds.   Once you’ve cleaned your pumpkins you can begin to peel the skin off. Stop Sabotaging Your Diet!

It's pretty discouraging when you work hard at the gym all week long but then somehow seem to magically sabotage all that work!  Here are some of the ways we sabotage our weightless goals. Binging on the weekends – It’s so easy to tell yourself that you deserve that bottle, uh…I mean glass of wine or that giant slice of cake because it’s the weekend and it’s only this one time.   The next thing you know it’s been two days of overindulging and then Monday morning is here and my pants are a little snug. Letting your cravings take over– When trying to lose weight it’s easy to feel deprived. Unlike the every day normal hunger that we all feel every day, cravings, are strong yearnings for certain foods. Cortney "Friendly" Chocolate Chip Cookies

Yesterday was a great day for some relaxing and having some fresh baked cookies!  With my restricted diet I decided to take me first attempt at baking some gluten-free, eggless, and dairy-free cookies.  Oh, come on, they don’t sound that bad…do they?  I picked up a bag of Bob’s Red Mill gluten free all-purpose baking flour and used the cookie recipe on the back of the bag as my recipe guideline.   The recipe is as  follows:  ·        1-1/2 cups  Gluten Free Oat Flour ·        1 cup  GF All Purpose Baking Flour ·        1 cup Organic Sugar ·        1/4 cup  Flaxseed Meal ·        1/4 cup  Arrowroot Starch ·        1-1/2 tsp  Xanthan Gum ·        1 tsp  Baking Soda ·     ...

Food Sensitivities

After struggling with trying to lose weight for the past year and not being very successful I decided to take a test to see if I had any food allergies.   Daman had been telling about the test and how surprising it was that so many people actually suffer from food allergies and sensitivities and don’t even know it.   The symptoms can range from bloating, weight gain, headaches, inflammation, fatigue and list goes on.   I figured that the test couldn’t hurt and maybe it would give me some insight.   The test was simple. I purchased it through my gym, went to a lab down the street from work to have my blood drawn, and then two days later I had t he results in my hands.   I then met with a nutritionist to go over my results and come up with a plan of action.   My results showed that while I did not have any full-blown (thank goodness) food allergies, it did show that I have sensitivity to certain foods.   Eggs I have eliminated from my diet f...
